INGREDIENTS
- ¼ cup canola oil
- ¼ cup cilantro leaves, for garnish
- 1 cinnamon stick
- 1 large tomato, chopped
- 1 pound boneless beef stew meat, cut in 2-inch cubes
- 1 tablespoon grated ginger
- 1 teaspoon coriander powder
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 thai green chile, thinly sliced
- 2 bay leaves
- 2 cups white basmati rice
- 2 large onions, sliced
- 3 cloves garlic, crushed
- 3 green cardamom pods
- 4 whole cloves
- 5 cups water
- 8 black peppercorns
- Kosher salt and freshly ground pepper
Method
Rinse rice under cold water. Soak in bowl of cold water for 30 min. and then simply drain.
Till then, heat canola oil over really high heat in large, heavy bottomed pot with a lid over it. Then add beef and cook, stir occasionally, unless meat is browned from all sides, let it be for about 6 min. time to add cloves, cinnamon stick, peppercorns, cardamom, bay leaves, cumin, coriander, and garam masala and then cook until fragrant, about 2 min. Add garlic, ginger, and onion then cook while stirring occasionally, until onion starts softening, about 2 min. Add chile, tomato, and then water. Season it with the salt and pepper. Bring it to boil then reduce it to simmer. Time to cover and simmer it until meat gets tendered, about 30 min. Strain mixture through colander or even mesh strainer while reserving liquid. Just pick out meat and put in a bowl, and then discard rest of the solids.
Combine meat, 3 ½ cups stock and drained rice in large pot. Bring to boil then reduce to simmer. Cover rice and also reduce heat to its lowest point. Cook it until rice is tendered and stock is absorbed about 15 min. Turn heat off and let rice sit, covered, for 5 min. Finally fluff it with fork before serving. Garnish it with the cilantro leaves if you wish.
